Small Kitchen Surprise: Pinoy Style Omelette

Eggs are a staple ingredient in a typical Filipino breakfast. Some like it cooked sunny side up while others prefer to have it as plain scrambled eggs. But personally, I love to have it prepared omelette style.

There are a lot of variations to the omelette and almost every country has their own version of it. No rules are to be followed --- you can mix and match whatever filling you like or you can just use whatever ingredients you have in the fridge or whatever suites your taste and fancy. Be creative and have fun! :)

Here's my own take to the omelette. Feel free to experiment and tweak it to your liking.

Ingredients:
2 eggs, whisked
1 small onion, finely chopped
2 cloves garlic, minced
2 small tomatoes, diced 
2 smoked longanisa, sliced (optional, you can use hotdogs too)
finely chopped herbs (optional - I used basil, parsley, cilantro, thyme)
salt 
pepper
oil or butter

Procedure:
1. Prepare all ingredients as instructed. You may season your whisked eggs with salt and pepper to taste.
2. On a small pan greased with 1 tsp of oil, quickly fry the smoked longanisa. Once cooked, push it to the sides or you can remove everything from the pan.
3. Saute onion, garlic and tomatoes on medium-high heat. Put in the cooked longanisa and saute for a minute. 
4. Remove the cooked filling and set it aside.
5. Using the same greased pan, pour the whisked eggs on the center, forming a pancake-like mixture.
6. Once the eggs start to cook and the top has few to little liquid on it, carefully spread the filling on half of the circle.
7. Gently fold the eggs and slide it off from the pan into your plate.
8. Enjoy! :)

Quick Tip: Storing eggs in the refrigerator lengthens their shelf-life for up to 3-4 weeks.
